Flounder
Appearance: Flounder are very distinctive in that their flattened bodies are deep brown and one size and pearl white on the other - and they have both eyes on one side of their head.

Size: Most flounder caught by Texas fishermen are between 1 and 3 pounds, although larger fish are taken.

Where it's found: Flounder like the edges of grassy shores, marsh drains, gravel, shell or rubble piles, as well as docks and pilings. During the fall, mature flounder migrate into the Gulf to spawn. At that time, they are concentrated quite heavily in Gulf passes.

What it eats: Flounder eat a surprisingly wide variety of finfish and crustaceans. Shrimp, mullet and mud minnows are at the top of the list.

Top lures & baits: Live baits such as shrimp, finger mulllet and mud minnows are good choices. Soft-plastic jigs also produce good catches when worked slowly across the bottom.

How it tastes: Flounder are among the most sought-after fillets in Texas.
